Description

A Dutch oven roast chicken is one of the easiest ways to get tender, juicy meat with perfectly crispy skin. Cooking the chicken in a Dutch oven locks in moisture while roasting the skin to golden perfection.


Ingredients

• 1 whole chicken
• 2 tbsp olive oil or butter
• 4 garlic cloves
• 1 onion
• 2 carrots
• 2 potatoes
• Salt, pepper, paprika
• Fresh herbs


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Season chicken with oil, salt, pepper, and paprika.
  3. Place vegetables in Dutch oven.
  4. Put chicken on top and cover.
  5. Roast 60 minutes, then uncover.
  6. Roast 20 more minutes until crispy.
