Ingredients
• 1 whole chicken
• 2 tbsp olive oil or butter
• 4 garlic cloves
• 1 onion
• 2 carrots
• 2 potatoes
• Salt, pepper, paprika
• Fresh herbs
Instructions
- Preheat oven to 375°F (190°C).
- Season chicken with oil, salt, pepper, and paprika.
- Place vegetables in Dutch oven.
- Put chicken on top and cover.
- Roast 60 minutes, then uncover.
- Roast 20 more minutes until crispy.
