Description

A hearty and flavorful vegan meatloaf recipe that’s easy to make and perfect for a comforting meal.


Ingredients

  • 1 tablespoon olive oil
  • 1 cup chopped yellow onion
  • 2 cloves garlic, minced
  • 1 cup finely chopped mushrooms
  • 1 cup cooked lentils (brown or green)
  • 1/2 cup rolled oats
  • 1/4 cup breadcrumbs
  • 2 tablespoons tomato paste
  • 1 tablespoon soy sauce
  • 1 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1/4 cup ketchup (for topping)
  • 1 tablespoon maple syrup (for topping)


Instructions

  1. Preheat oven to 375°F (190°C). Grease a loaf pan.
  2. Heat olive oil in a skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and mushrooms and cook until mushrooms release their liquid and are browned, about 8-10 minutes.
  3. In a large bowl, combine cooked lentils, sautéed onion and mushroom mixture, rolled oats, breadcrumbs, tomato paste, soy sauce, thyme, smoked paprika, salt, and pepper. Mix well until everything is evenly combined.
  4. Press the mixture firmly into the prepared loaf pan.
  5. In a small bowl, mix ketchup and maple syrup. Spread evenly over the top of the meatloaf.
  6. Bake for 40-50 minutes, or until firm and heated through.
  7. Let the meatloaf rest for 10 minutes before slicing and serving.

Notes

  • You can substitute other vegetables like finely chopped carrots or celery for some of the mushrooms.
  • For a gluten-free option, use gluten-free oats and breadcrumbs.
  • If you don’t have rolled oats, you can pulse regular oats in a food processor a few times.
