A hearty and flavorful vegan meatloaf recipe that’s easy to make and perfect for a comforting meal.
Ingredients
- 1 tablespoon olive oil
- 1 cup chopped yellow onion
- 2 cloves garlic, minced
- 1 cup finely chopped mushrooms
- 1 cup cooked lentils (brown or green)
- 1/2 cup rolled oats
- 1/4 cup breadcrumbs
- 2 tablespoons tomato paste
- 1 tablespoon soy sauce
- 1 teaspoon dried thyme
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 1/4 cup ketchup (for topping)
- 1 tablespoon maple syrup (for topping)
Instructions
- Preheat oven to 375°F (190°C). Grease a loaf pan.
- Heat olive oil in a skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and mushrooms and cook until mushrooms release their liquid and are browned, about 8-10 minutes.
- In a large bowl, combine cooked lentils, sautéed onion and mushroom mixture, rolled oats, breadcrumbs, tomato paste, soy sauce, thyme, smoked paprika, salt, and pepper. Mix well until everything is evenly combined.
- Press the mixture firmly into the prepared loaf pan.
- In a small bowl, mix ketchup and maple syrup. Spread evenly over the top of the meatloaf.
- Bake for 40-50 minutes, or until firm and heated through.
- Let the meatloaf rest for 10 minutes before slicing and serving.
Notes
- You can substitute other vegetables like finely chopped carrots or celery for some of the mushrooms.
- For a gluten-free option, use gluten-free oats and breadcrumbs.
- If you don’t have rolled oats, you can pulse regular oats in a food processor a few times.
