Description
A rich and flavorful Tuscan-inspired tortellini sauce that brings the taste of Italy to your kitchen. Perfect for a quick weeknight meal or an elegant dinner party.
Ingredients
- 1 tablespoon olive oil
- 1 pound Italian sausage, casings removed
- 1 cup chopped yellow onion
- 2 cloves garlic, minced
- 1 (28 ounce) can crushed tomatoes
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1 teaspoon dried basil
- 1/2 teaspoon dried oregano
- Salt and freshly ground black pepper to taste
- 1 pound tortellini, cooked according to package directions
Instructions
- Heat olive oil in a large skillet over medium heat. Add Italian sausage and cook, breaking it up with a spoon, until browned. Remove sausage with a slotted spoon and set aside, leaving the drippings in the skillet.
- Add chopped onion to the skillet and cook until softened, about 5 minutes. Add minced garlic and cook for 1 minute more until fragrant.
- Stir in crushed tomatoes, heavy cream, Parmesan cheese, dried basil, and dried oregano. Bring to a simmer and cook for 10 minutes, stirring occasionally, until the sauce has thickened slightly.
- Return the cooked sausage to the skillet and stir to combine. Season with salt and pepper to taste.
- Add the cooked tortellini to the sauce and toss to coat. Serve immediately.
Notes
- For a spicier sauce, add a pinch of red pepper flakes with the garlic.
- You can substitute ground chicken or turkey for Italian sausage if desired.
- Garnish with fresh basil or parsley before serving.
