Ingredients

  • 1 tablespoon olive oil
  • 1 pound Italian sausage, casings removed
  • 1 cup chopped yellow onion
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • Salt and freshly ground black pepper to taste
  • 1 pound tortellini, cooked according to package directions


Instructions

  1. Heat olive oil in a large skillet over medium heat. Add Italian sausage and cook, breaking it up with a spoon, until browned. Remove sausage with a slotted spoon and set aside, leaving the drippings in the skillet.
  2. Add chopped onion to the skillet and cook until softened, about 5 minutes. Add minced garlic and cook for 1 minute more until fragrant.
  3. Stir in crushed tomatoes, heavy cream, Parmesan cheese, dried basil, and dried oregano. Bring to a simmer and cook for 10 minutes, stirring occasionally, until the sauce has thickened slightly.
  4. Return the cooked sausage to the skillet and stir to combine. Season with salt and pepper to taste.
  5. Add the cooked tortellini to the sauce and toss to coat. Serve immediately.
