- 1/2 cup dried cranberries

Instructions
- Preheat your oven to 375°F (190°C).
- Butterfly the turkey breast by slicing it horizontally almost all the way through, then opening it like a book.
- Season the inside of the turkey breast with salt and pepper.

- Spread the cranberry-walnut-sage mixture evenly over the seasoned turkey breast.
- Roll the turkey breast tightly, starting from the shorter side.
- Secure the roll with kitchen twine at 1-inch intervals.
- Rub the outside of the turkey roll with olive oil and season with more salt and pepper.
- Place the turkey roll in a roasting pan.
- Roast for 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C).
- Remove from the oven and let it rest for 10-15 minutes before slicing and serving.
