Moist and flavorful turkey meatloaf baked in muffin tins for perfectly portioned, quick-cooking meals.
Ingredients
- 1 pound ground turkey
- 1/2 cup breadcrumbs
- 1/4 cup finely chopped onion
- 1/4 cup finely chopped bell pepper (any color)
- 1 large egg
- 2 tablespoons milk
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon garlic powder
- Salt and freshly ground black pepper to taste
- Optional: Ketchup or your favorite glaze for topping
Instructions
- Preheat oven to 375°F (190°C). Grease a standard 12-cup muffin tin or use silicone muffin liners.
- In a large bowl, combine ground turkey, breadcrumbs, chopped onion, chopped bell pepper, egg, milk, Worcestershire sauce, Italian seasoning, garlic powder, salt, and pepper.
- Gently mix all ingredients until just combined. Be careful not to overmix, as this can make the meatloaf tough.
- Divide the mixture evenly among the 12 muffin cups, pressing it gently into each cup.
- If desired, top each muffin with a spoonful of ketchup or your favorite glaze.
- Bake for 20-25 minutes, or until the internal temperature reaches 165°F (74°C) and the meatloaf is cooked through.
- Let the meatloaf muffins cool in the tin for a few minutes before carefully removing them.
Notes
- For a healthier option, use whole wheat breadcrumbs.
- You can add other finely chopped vegetables like carrots or celery.
- These can be made ahead of time and reheated for a quick meal.
- Ensure the internal temperature reaches 165°F (74°C) for food safety.
