Description
A classic and delicious turkey gravy recipe that is easy to make, perfect for any holiday meal or roast chicken.
Ingredients
- 4 cups turkey drippings (from roasting a turkey, skimmed of fat)
- 4 tablespoons all-purpose flour
- 1 teaspoon salt (or to taste)
- 1/2 teaspoon black pepper (or to taste)
- Optional: 1/4 cup dry white wine or sherry
- Optional: Fresh chopped parsley for garnish
Instructions
- Skim the fat from the turkey drippings. You should have approximately 4 cups of defatted drippings. If you don’t have enough drippings, you can supplement with low-sodium turkey broth.
- In a saucepan or skillet over medium heat, whisk together the flour and the skimmed turkey drippings until smooth.
- Cook, whisking constantly, for 2-3 minutes, until the mixture thickens slightly and turns a pale golden brown. This is your roux.
- If using, gradually whisk in the white wine or sherry, scraping up any browned bits from the bottom of the pan. Let it simmer for 1 minute.
- Slowly whisk in the remaining turkey drippings (or broth if supplementing) until the gravy is smooth.
- Bring the gravy to a simmer, stirring occasionally. Reduce heat to low and let it cook for 5-10 minutes, or until it reaches your desired consistency.
- Season with salt and black pepper to taste.
- Serve hot, garnished with fresh parsley if desired.
Notes
- For a richer flavor, you can add a tablespoon of soy sauce or Worcestershire sauce.
- If your gravy is too thick, thin it with a little more turkey broth or water.
- If your gravy is too thin, you can make a slurry of 1 tablespoon of cornstarch mixed with 2 tablespoons of cold water and whisk it into the simmering gravy until thickened.
