Ingredients

  • 1 baguette, sliced into 1/2-inch rounds
  • 2-3 tablespoons olive oil, plus more for drizzling
  • 2 cloves garlic, halved
  • 4 large ripe tomatoes, diced (about 3 cups)
  • 1/4 cup fresh basil leaves, chopped
  • 1 tablespoon balsamic glaze (optional)
  • Salt and freshly ground black pepper to taste


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Arrange the baguette slices on a baking sheet. Brush both sides lightly with olive oil.
  3. Bake for 8-10 minutes, or until golden brown and crisp.
  4. While the bread is still warm, rub one side of each slice with the cut side of the garlic cloves.
  5. In a medium bowl, combine the diced tomatoes, chopped basil, 2 tablespoons of olive oil, salt, and pepper. Stir gently to combine. If using, drizzle in the balsamic glaze.
  6. Spoon the tomato mixture onto the toasted baguette slices.
  7. Drizzle with a little extra olive oil before serving.
