Description
A classic and simple Italian appetizer featuring toasted bread rubbed with garlic and topped with fresh diced tomatoes, basil, and olive oil.
Ingredients
- 1 baguette, sliced into 1/2-inch rounds
- 2-3 tablespoons olive oil, plus more for drizzling
- 2 cloves garlic, halved
- 4 large ripe tomatoes, diced (about 3 cups)
- 1/4 cup fresh basil leaves, chopped
- 1 tablespoon balsamic glaze (optional)
- Salt and freshly ground black pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Arrange the baguette slices on a baking sheet. Brush both sides lightly with olive oil.
- Bake for 8-10 minutes, or until golden brown and crisp.
- While the bread is still warm, rub one side of each slice with the cut side of the garlic cloves.
- In a medium bowl, combine the diced tomatoes, chopped basil, 2 tablespoons of olive oil, salt, and pepper. Stir gently to combine. If using, drizzle in the balsamic glaze.
- Spoon the tomato mixture onto the toasted baguette slices.
- Drizzle with a little extra olive oil before serving.
Notes
- Use the freshest, ripest tomatoes you can find for the best flavor.
- You can toast the bread under the broiler for a quicker crisp, but watch it closely to prevent burning.
- Add a pinch of red pepper flakes for a touch of heat.
- For a creamier topping, you can add some fresh mozzarella or burrata.
