Description

A quick and easy teriyaki meatball recipe that’s perfect for a weeknight meal or a party appetizer. These meatballs are coated in a sweet and savory teriyaki sauce.


Ingredients

  • 1 pound ground beef or turkey
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 egg
  • 1/4 cup finely chopped onion
  • 1 clove garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup soy sauce
  • 1/4 cup packed brown sugar
  • 2 tablespoons mirin (Japanese sweet rice wine)
  • 1 tablespoon grated fresh ginger
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • Sesame seeds, for garnish (optional)
  • Chopped green onions, for garnish (optional)


Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine ground meat, breadcrumbs, milk, egg, onion, garlic, salt, and pepper. Mix well and form into small meatballs.
  3. Place meatballs on the prepared baking sheet and bake for 15-20 minutes, or until browned and cooked through.
  4. While meatballs are baking, prepare the teriyaki sauce. In a small saucepan, whisk together soy sauce, brown sugar, mirin, and ginger. Bring to a simmer over medium heat.
  5. In a small bowl, whisk together cornstarch and water to create a slurry.
  6. Gradually whisk the cornstarch slurry into the simmering teriyaki sauce until thickened. Cook for 1-2 minutes more.
  7. Once meatballs are cooked, drain off any excess fat.
  8. Add the baked meatballs to the teriyaki sauce and toss to coat evenly.
  9. Serve hot, garnished with sesame seeds and green onions if desired.

Notes

  • For a spicier sauce, add a pinch of red pepper flakes.
  • You can substitute chicken or pork for the ground beef or turkey.
  • These meatballs can be made ahead of time and reheated.
