Ingredients

  • 1 cup pumpkin puree
  • 1 cup granulated sugar
  • 1 cup water
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon marshmallow extract (optional, for enhanced marshmallow flavor)
  • Pinch of salt


Instructions

  1. In a medium saucepan, combine the pumpkin puree, granulated sugar, and water.
  2. Stir in the pumpkin pie spice and the pinch of salt.
  3. Bring the mixture to a boil over medium heat, stirring constantly until the sugar is dissolved.
  4. Reduce the heat to low and simmer for 10-15 minutes, stirring occasionally, until the syrup has thickened slightly.
  5. Remove the saucepan from the heat.
  6. Stir in the vanilla extract and marshmallow extract (if using).
  7. Let the syrup cool completely.
  8. Strain the syrup through a fine-mesh sieve or cheesecloth into a clean jar or bottle to remove any pumpkin solids.
  9. Store the syrup in the refrigerator.
