Description
A classic holiday side dish, Sweet Potato Marshmallow Delight is a creamy and sweet casserole topped with toasted marshmallows.
Ingredients
- 2 pounds sweet potatoes, peeled and cubed
- 1/2 cup butter, melted
- 1/4 cup granulated sugar
- 1/4 cup milk
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1 cup mini marshmallows
Instructions
- Preheat oven to 375°F (190°C).
- Boil or steam sweet potatoes until tender, about 15-20 minutes. Drain well.
- Mash the sweet potatoes in a large bowl.
- Add melted butter, granulated sugar, milk, vanilla extract, and salt to the mashed sweet potatoes. Mix until well combined and smooth.
- Pour the sweet potato mixture into a greased 8×8 inch baking dish.
- Spread the mini marshmallows evenly over the top of the sweet potato mixture.
- Bake for 20-25 minutes, or until the marshmallows are golden brown and toasted.
- Serve hot.
Notes
- For a richer flavor, you can add a pinch of cinnamon or nutmeg to the sweet potato mixture.
- If you don’t have mini marshmallows, you can use regular marshmallows, cut into smaller pieces.
- This dish can be prepared ahead of time and reheated before serving.
