Description

A classic holiday side dish, Sweet Potato Marshmallow Delight is a creamy and sweet casserole topped with toasted marshmallows.


Ingredients

  • 2 pounds sweet potatoes, peeled and cubed
  • 1/2 cup butter, melted
  • 1/4 cup granulated sugar
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 cup mini marshmallows


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Boil or steam sweet potatoes until tender, about 15-20 minutes. Drain well.
  3. Mash the sweet potatoes in a large bowl.
  4. Add melted butter, granulated sugar, milk, vanilla extract, and salt to the mashed sweet potatoes. Mix until well combined and smooth.
  5. Pour the sweet potato mixture into a greased 8×8 inch baking dish.
  6. Spread the mini marshmallows evenly over the top of the sweet potato mixture.
  7. Bake for 20-25 minutes, or until the marshmallows are golden brown and toasted.
  8. Serve hot.

Notes

  • For a richer flavor, you can add a pinch of cinnamon or nutmeg to the sweet potato mixture.
  • If you don’t have mini marshmallows, you can use regular marshmallows, cut into smaller pieces.
