Ingredients
- 2 large sweet potatoes (about 1.5 lbs), peeled and diced into 1-inch pieces
- 1 lb fresh green beans, trimmed

- 1/4 cup maple syrup
- 2 tablespoons balsamic vinegar
- 1/2 teaspoon smoked paprika
- 1/4 cup chopped pecans (optional)
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss the diced sweet potatoes and trimmed green beans with olive oil, salt, and pepper.
- Spread the vegetable mixture in a single layer on a large baking sheet.
- Bake for 15 minutes.
- While the vegetables are baking, whisk together the maple syrup, balsamic vinegar, and smoked paprika in a small bowl.
- Remove the baking sheet from the oven. Drizzle the maple-balsamic mixture over the vegetables and toss gently to coat.
- Return the baking sheet to the oven and bake for another 10-15 minutes, or until the sweet potatoes are tender and the green beans are slightly caramelized.
- If using, sprinkle the chopped pecans over the bake during the last 5 minutes of cooking.
- Serve hot.
