Ingredients
- 2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1/4 cup dried edible cherry blossoms, finely chopped (or 1 tsp cherry blossom extract)
- Optional: Pink food coloring
Instructions
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- If using, add a few drops of pink food coloring and mix until evenly distributed.
- Stir in the almond extract and finely chopped dried cherry blossoms (or cherry blossom extract).
- Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
- Cover the dough with plastic wrap and chill in the refrigerator for at least 30 minutes.
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- On a lightly floured surface, roll out the chilled dough to about 1/4-inch thickness.
- Use cookie cutters to cut out desired shapes (flower shapes are ideal).
- Place the cookies on the prepared baking sheets, about 1 inch apart.
- Bake for 8-10 minutes, or until the edges are lightly golden.
- Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
- Decorate with icing or edible flowers if desired.
