Description

Delicate and fragrant cherry blossom cookies with a sweet, floral flavor, perfect for spring or any special occasion.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/4 cup dried edible cherry blossoms, finely chopped (or 1 tsp cherry blossom extract)
  • Optional: Pink food coloring

Instructions

  1. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. If using, add a few drops of pink food coloring and mix until evenly distributed.
  5. Stir in the almond extract and finely chopped dried cherry blossoms (or cherry blossom extract).
  6. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
  7. Cover the dough with plastic wrap and chill in the refrigerator for at least 30 minutes.
  8. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  9. On a lightly floured surface, roll out the chilled dough to about 1/4-inch thickness.
  10. Use cookie cutters to cut out desired shapes (flower shapes are ideal).
  11. Place the cookies on the prepared baking sheets, about 1 inch apart.
  12. Bake for 8-10 minutes, or until the edges are lightly golden.
  13. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  14. Decorate with icing or edible flowers if desired.

Notes

  • Ensure your cherry blossoms are food-grade and intended for culinary use.
  • If you can’t find dried cherry blossoms, cherry blossom extract can be used, but the visual appeal will be different.
  • Chilling the dough is crucial for easy handling and preventing the cookies from spreading too much during baking.
  • These cookies can be stored in an airtight container at room temperature for up to a week.
