Ingredients

  • 1 lb Brussels sprouts, trimmed and halved
  • 2 tbsp olive oil
  • 1/4 cup pineapple juice
  • 2 tbsp rice vinegar
  • 1 tbsp soy sauce
  • 1 tbsp honey or maple syrup
  • 1 tsp cornstarch
  • 1/4 tsp red pepper flakes (optional)
  • Sesame seeds for garnish (optional)


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss Brussels sprouts with olive oil, salt, and pepper on a baking sheet. Roast for 20-25 minutes, or until tender and slightly caramelized.
  3. While sprouts are roasting, whisk together pineapple juice, rice vinegar, soy sauce, honey (or maple syrup), cornstarch, and red pepper flakes (if using) in a small bowl until smooth.
  4. In a large skillet, heat the sauce over medium heat, stirring constantly, until it thickens.
  5. Add the roasted Brussels sprouts to the skillet with the sauce and toss to coat evenly.
  6. Serve immediately, garnished with sesame seeds if desired.

Notes

  • For a spicier kick, add more red pepper flakes.
  • If you don’t have pineapple juice, orange juice can be substituted.
