Ingredients
- 1 lb Brussels sprouts, trimmed and halved
- 2 tbsp olive oil
- 1/4 cup pineapple juice
- 2 tbsp rice vinegar
- 1 tbsp soy sauce
- 1 tbsp honey or maple syrup
- 1 tsp cornstarch
- 1/4 tsp red pepper flakes (optional)
- Sesame seeds for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C).
- Toss Brussels sprouts with olive oil, salt, and pepper on a baking sheet. Roast for 20-25 minutes, or until tender and slightly caramelized.
- While sprouts are roasting, whisk together pineapple juice, rice vinegar, soy sauce, honey (or maple syrup), cornstarch, and red pepper flakes (if using) in a small bowl until smooth.
- In a large skillet, heat the sauce over medium heat, stirring constantly, until it thickens.
- Add the roasted Brussels sprouts to the skillet with the sauce and toss to coat evenly.
- Serve immediately, garnished with sesame seeds if desired.
Notes
- For a spicier kick, add more red pepper flakes.
- If you don’t have pineapple juice, orange juice can be substituted.
- Ensure the cornstarch is fully dissolved in the liquid to avoid clumps.
