Ingredients
- 2 medium cucumbers
- 1 cup frozen sweet corn
- 1/2 cup mayonnaise
- 1/4 cup finely chopped red onion
- 1/4 cup cotija cheese (or finely crumbled feta)
- 2 tablespoons lime juice
- 1 tablespoon chili powder
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped fresh cilantro (for garnish)
Instructions
- Thaw the frozen corn by placing it in a colander and running cool water over it for about 2 minutes. Drain well and set aside.
- Peel the cucumbers and slice them into 1/2-inch thick pieces. Place them in a large mixing bowl.
- In a small bowl, whisk together the mayonnaise, red onion, cotija cheese, lime juice, chili powder, sugar, salt, and black pepper until well combined.
- Pour the dressing over the sliced cucumbers and thawed corn.
- Gently toss the salad until all the ingredients are evenly coated in the creamy dressing.
- Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
- Before serving, garnish the salad with fresh cilantro.
Notes
- If cotija cheese is unavailable, finely crumbled feta makes a great substitute.
- For a spicier kick, add a pinch of cayenne pepper to the dressing.
- This salad is best served within 2-3 hours of preparation as cucumbers release water over time.
