Ingredients

  • 2 medium cucumbers
  • 1 cup frozen sweet corn
  • 1/2 cup mayonnaise
  • 1/4 cup finely chopped red onion
  • 1/4 cup cotija cheese (or finely crumbled feta)
  • 2 tablespoons lime juice
  • 1 tablespoon chili powder
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh cilantro (for garnish)


Instructions

  1. Thaw the frozen corn by placing it in a colander and running cool water over it for about 2 minutes. Drain well and set aside.
  2. Peel the cucumbers and slice them into 1/2-inch thick pieces. Place them in a large mixing bowl.
  3. In a small bowl, whisk together the mayonnaise, red onion, cotija cheese, lime juice, chili powder, sugar, salt, and black pepper until well combined.
  4. Pour the dressing over the sliced cucumbers and thawed corn.
  5. Gently toss the salad until all the ingredients are evenly coated in the creamy dressing.
