Ingredients
- 3 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1 cup (2 sticks) unsalted butter, softened
- 1 1/2 cups granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1 1/4 cups milk
- 1 lb fresh strawberries, hulled and sliced
- 1/4 cup granulated sugar (for strawberries)
- 2 cups heavy cream
- 1/4 cup powdered sugar (for whipped cream)
- 1 tsp vanilla extract (for whipped cream)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a large bowl, cream together softened butter and 1 1/2 cups granulated sugar until light and fluffy. Beat in eggs one at a time, then stir in 1 tsp vanilla extract.
- Alternately add the dry ingredients and milk to the butter mixture, beginning and ending with the dry ingredients. Mix until just combined.
- Divide batter evenly between the prepared cake pans.
- Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean. Let cool in pans for 10 minutes, then invert onto wire racks to cool completely.
- While cakes cool, toss sliced strawberries with 1/4 cup granulated sugar. Let sit for at least 15 minutes to macerate.
- In a separate bowl, whip heavy cream with powdered sugar and 1 tsp vanilla extract until stiff peaks form.
- Once cakes are completely cool, place one cake layer on a serving plate. Spread a generous amount of whipped cream over the top. Arrange a layer of macerated strawberries over the whipped cream.
- Top with the second cake layer. Frost the entire cake with the remaining whipped cream and decorate with more strawberries.
Notes
- For extra flavor, you can add a tablespoon of strawberry liqueur to the macerated strawberries.
- Ensure your heavy cream is very cold for the best whipping results.
- The cake can be assembled a few hours ahead of time and refrigerated. Add fresh strawberries just before serving for the best texture.
