Description

A delightful Strawberry Shortcake Birthday Cake that combines the classic flavors of fresh strawberries, fluffy cake, and whipped cream into a festive dessert perfect for any celebration.


Ingredients

  • 3 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 1/4 cups milk
  • 1 lb fresh strawberries, hulled and sliced
  • 1/4 cup granulated sugar (for strawberries)
  • 2 cups heavy cream
  • 1/4 cup powdered sugar (for whipped cream)
  • 1 tsp vanilla extract (for whipped cream)


Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, cream together softened butter and 1 1/2 cups granulated sugar until light and fluffy. Beat in eggs one at a time, then stir in 1 tsp vanilla extract.
  4. Alternately add the dry ingredients and milk to the butter mixture, beginning and ending with the dry ingredients. Mix until just combined.
  5. Divide batter evenly between the prepared cake pans.
  6. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean. Let cool in pans for 10 minutes, then invert onto wire racks to cool completely.
  7. While cakes cool, toss sliced strawberries with 1/4 cup granulated sugar. Let sit for at least 15 minutes to macerate.
  8. In a separate bowl, whip heavy cream with powdered sugar and 1 tsp vanilla extract until stiff peaks form.
  9. Once cakes are completely cool, place one cake layer on a serving plate. Spread a generous amount of whipped cream over the top. Arrange a layer of macerated strawberries over the whipped cream.
  10. Top with the second cake layer. Frost the entire cake with the remaining whipped cream and decorate with more strawberries.

Notes

  • For extra flavor, you can add a tablespoon of strawberry liqueur to the macerated strawberries.
  • Ensure your heavy cream is very cold for the best whipping results.
  • The cake can be assembled a few hours ahead of time and refrigerated. Add fresh strawberries just before serving for the best texture.
