Ingredients
- 1 cup (2 sticks) unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 ½ cups strawberry jam
- 1 cup powdered sugar
- 2-3 tablespoons milk
- 1 teaspoon vanilla extract
- Optional: colorful sprinkles
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Press half of the cookie dough evenly into the bottom of the prepared baking pan.
- Spread the strawberry jam evenly over the pressed cookie dough.
- Crumble the remaining cookie dough over the jam layer.
- Bake for 30-35 minutes, or until the edges are golden brown and the center is set.
- Let the bars cool completely in the pan on a wire rack.
- While the bars are cooling, prepare the glaze. In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth and pourable. Add more milk a teaspoon at a time if needed to reach desired consistency.
- Drizzle the glaze over the cooled bars.
- If desired, sprinkle with colorful sprinkles before the glaze sets.
- Cut into bars and serve.
