Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 ½ cups strawberry jam
  • 1 cup powdered sugar
  • 2-3 tablespoons milk
  • 1 teaspoon vanilla extract
  • Optional: colorful sprinkles


Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Press half of the cookie dough evenly into the bottom of the prepared baking pan.
  7. Spread the strawberry jam evenly over the pressed cookie dough.
  8. Crumble the remaining cookie dough over the jam layer.
  9. Bake for 30-35 minutes, or until the edges are golden brown and the center is set.
  10. Let the bars cool completely in the pan on a wire rack.
  11. While the bars are cooling, prepare the glaze. In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth and pourable. Add more milk a teaspoon at a time if needed to reach desired consistency.
  12. Drizzle the glaze over the cooled bars.
  13. If desired, sprinkle with colorful sprinkles before the glaze sets.
  14. Cut into bars and serve.
