Description

A delightful recipe for strawberry cheesecake cookies that are both sweet and easy to make, perfect for any occasion.

Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 8 ounces cream cheese, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup strawberry puree or jam
  • 1/4 cup freeze-dried strawberries, crushed (optional, for extra flavor and color)
  • White chocolate chips (optional, for topping)

Instructions

  1. Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and cream cheese until light and fluffy.
  3. Gradually add the granulated sugar and beat until well combined.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. In a separate bowl, whisk together the flour, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  7. Gently fold in the strawberry puree or jam and the crushed freeze-dried strawberries (if using).
  8. Drop rounded tablespoons of dough onto the prepared baking sheets, leaving about 2 inches between cookies.
  9. Bake for 10-12 minutes, or until the edges are lightly golden and the centers are still slightly soft.
  10. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  11. If desired, drizzle with melted white chocolate or sprinkle with extra crushed freeze-dried strawberries before serving.

Notes

  • Ensure butter and cream cheese are at room temperature for easier creaming.
  • For a stronger strawberry flavor, use strawberry jam instead of puree.
  • Crushed freeze-dried strawberries add a wonderful concentrated flavor and color.
  • These cookies are best enjoyed within a few days of baking.
