A delicious and easy recipe for sticky cherry chicken thighs, perfect for a weeknight dinner.
Ingredients
- 1.5 lbs boneless, skinless chicken thighs
- 1 tbsp olive oil
- 1/2 cup cherry preserves
- 2 tbsp soy sauce
- 1 tbsp balsamic vinegar
- 1 clove garlic, minced
- 1/4 tsp red pepper flakes (optional)
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 400°F (200°C).
- Pat chicken thighs dry and season with salt and pepper.
- Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken thighs for 2-3 minutes per side until golden brown.
- In a small bowl, whisk together cherry preserves, soy sauce, balsamic vinegar, minced garlic, and red pepper flakes (if using).
- Pour the sauce over the chicken in the skillet.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until chicken is cooked through and the sauce has thickened and caramelized.
- Garnish with fresh parsley before serving.
Notes
- Ensure chicken is cooked to an internal temperature of 165°F (74°C).
- Adjust red pepper flakes for desired spice level.
- Serve with rice, mashed potatoes, or a side salad.
