Ingredients

  • 1.5 lbs boneless, skinless chicken thighs
  • 1 tbsp olive oil
  • 1/2 cup cherry preserves
  • 2 tbsp soy sauce
  • 1 tbsp balsamic vinegar
  • 1 clove garlic, minced
  • 1/4 tsp red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Pat chicken thighs dry and season with salt and pepper.
  3. Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken thighs for 2-3 minutes per side until golden brown.
  4. In a small bowl, whisk together cherry preserves, soy sauce, balsamic vinegar, minced garlic, and red pepper flakes (if using).
  5. Pour the sauce over the chicken in the skillet.
  6. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until chicken is cooked through and the sauce has thickened and caramelized.
