Ingredients
- 1.5 lbs boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 (10 oz) package frozen chopped spinach, thawed and squeezed dry
- 1 (14 oz) can artichoke hearts, drained and chopped
- 1/2 cup mayonnaise
- 1/4 cup grated Parmesan cheese
- 1/4 cup shredded mozzarella cheese
- 2 cloves garlic, minced
- 1/4 tsp red pepper flakes (optional)
Instructions
- Preheat oven to 400°F (200°C).
- In a small bowl, combine spinach, artichoke hearts, mayonnaise, Parmesan cheese, mozzarella cheese, minced garlic, salt, pepper, and red pepper flakes (if using). Mix well.
- Place chicken breasts in a lightly greased baking dish.
- Spread the spinach artichoke mixture evenly over the top of each chicken breast.
- Bake for 25-30 minutes, or until chicken is cooked through and the topping is golden brown and bubbly.
- Let rest for a few minutes before serving.
Notes
- Ensure the frozen spinach is thoroughly thawed and squeezed dry to prevent a watery sauce.
- You can substitute fresh spinach for frozen; wilt it first and then chop.
- For a richer flavor, you can add a splash of heavy cream to the spinach artichoke mixture.
