Ingredients

  • 1 medium spaghetti squash
  • 1 tablespoon olive oil
  • 1 cup sliced mushrooms
  • 2 cloves garlic, minced
  • 4 cups fresh spinach
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Place the squash halves cut-side down on a baking sheet.
  4. Bake for 30-40 minutes, or until tender.
  5. While the squash is baking, heat olive oil in a skillet over medium heat.

  7. Add garlic and cook for 1 minute more until fragrant.
  8. Add spinach and cook until wilted, about 2-3 minutes.

  10. Once the squash is tender, remove from oven and let cool slightly.
  11. Use a fork to scrape out the spaghetti-like strands from the squash.
  12. Stir the spinach and mushroom mixture into the squash strands.
  13. Top with Parmesan cheese and serve.
