Ingredients

  • 1 cup shredded cheddar cheese
  • 1/4 cup finely chopped jalapeños (seeds removed for less heat)
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1 large egg, lightly beaten
  • 2 tablespoons milk
  • Vegetable oil for frying


Instructions

  1. In a medium bowl, combine shredded cheddar cheese and chopped jalapeños.
  2. In a separate small bowl, whisk together flour, baking powder, and salt.
  3. Add the dry ingredients to the cheese and jalapeño mixture and stir to combine.
  4. In another small bowl, whisk together the egg and milk.
  5. Pour the wet ingredients into the dry ingredients and mix until just combined. The batter will be thick.
  6. Heat about 1-2 inches of vegetable oil in a heavy-bottomed pot or deep skillet over medium-high heat to 350°F (175°C).
  7. Carefully drop spoonfuls of the batter into the hot oil, being careful not to overcrowd the pot.
  8. Fry for 2-3 minutes per side, or until golden brown and cooked through.
  9. Remove the bites with a slotted spoon and drain on paper towels.
