A quick and easy recipe for spicy cheddar jalapeño bites, perfect as an appetizer or snack.
Ingredients
- 1 cup shredded cheddar cheese
- 1/4 cup finely chopped jalapeños (seeds removed for less heat)
- 1/4 cup all-purpose flour
- 1/4 teaspoon baking powder
- 1/8 teaspoon salt
- 1 large egg, lightly beaten
- 2 tablespoons milk
- Vegetable oil for frying
Instructions
- In a medium bowl, combine shredded cheddar cheese and chopped jalapeños.
- In a separate small bowl, whisk together flour, baking powder, and salt.
- Add the dry ingredients to the cheese and jalapeño mixture and stir to combine.
- In another small bowl, whisk together the egg and milk.
- Pour the wet ingredients into the dry ingredients and mix until just combined. The batter will be thick.
- Heat about 1-2 inches of vegetable oil in a heavy-bottomed pot or deep skillet over medium-high heat to 350°F (175°C).
- Carefully drop spoonfuls of the batter into the hot oil, being careful not to overcrowd the pot.
- Fry for 2-3 minutes per side, or until golden brown and cooked through.
- Remove the bites with a slotted spoon and drain on paper towels.
- Serve hot.
Notes
- For extra spice, leave some seeds in the jalapeños.
- You can add other seasonings like garlic powder or onion powder to the batter.
- These bites can be served with a dipping sauce like ranch or sour cream.
