Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 8 oz pasta (penne, fettuccine, or your favorite)
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1 tsp Cajun seasoning
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper (or to taste)
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Shredded Parmesan cheese (for garnish)


Instructions

  1. Cook pasta according to package directions. Drain and set aside.
  2. While pasta is cooking, heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through. Remove chicken from skillet and set aside.
  3. Add onion and bell peppers to the skillet and cook until softened, about 5-7 minutes. Add garlic and cook for 1 minute more until fragrant.
  4. Stir in diced tomatoes, chicken broth, heavy cream, Cajun seasoning, paprika, and cayenne pepper. Bring to a simmer and cook for 5 minutes, stirring occasionally, until sauce has thickened slightly.
  5. Return the cooked chicken to the skillet. Season with salt and black pepper to taste.
  6. Add the cooked pasta to the skillet and toss to coat with the sauce.
  7. Serve immediately, garnished with fresh parsley and Parmesan cheese.
