Description
A quick and easy recipe for spicy Cajun chicken pasta, featuring tender chicken, a creamy, flavorful Cajun sauce, and your favorite pasta.
Ingredients
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 8 oz pasta (penne, fettuccine, or your favorite)
- 2 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 (14.5 oz) can diced tomatoes, undrained
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1 tsp Cajun seasoning
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper (or to taste)
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
- Shredded Parmesan cheese (for garnish)
Instructions
- Cook pasta according to package directions. Drain and set aside.
- While pasta is cooking, heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through. Remove chicken from skillet and set aside.
- Add onion and bell peppers to the skillet and cook until softened, about 5-7 minutes. Add garlic and cook for 1 minute more until fragrant.
- Stir in diced tomatoes, chicken broth, heavy cream, Cajun seasoning, paprika, and cayenne pepper. Bring to a simmer and cook for 5 minutes, stirring occasionally, until sauce has thickened slightly.
- Return the cooked chicken to the skillet. Season with salt and black pepper to taste.
- Add the cooked pasta to the skillet and toss to coat with the sauce.
- Serve immediately, garnished with fresh parsley and Parmesan cheese.
Notes
- Adjust the cayenne pepper to control the spice level.
- Feel free to add other vegetables like mushrooms or spinach.
- For a spicier dish, add a pinch of red pepper flakes.
