Description
A quick and delicious pasta dish featuring smoked salmon, creamy sauce, and fresh herbs.
Ingredients
- 1 pound linguine
- 1 tablespoon olive oil
- 1 shallot, finely chopped
- 2 cloves garlic, minced
- 1/2 cup dry white wine (optional)
- 1 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 4 ounces smoked salmon, flaked
- 2 tablespoons fresh dill, chopped
- 2 tablespoons fresh parsley, chopped
- Salt and freshly ground black pepper to taste
Instructions
- Cook linguine according to package directions. Reserve about 1 cup of pasta water before draining.
- While pasta is cooking, heat olive oil in a large skillet over medium heat. Add shallot and cook until softened, about 3-4 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- If using, pour in white wine and let it simmer for 2 minutes, scraping up any browned bits from the bottom of the pan.
- Stir in heavy cream and bring to a gentle simmer. Cook for 3-5 minutes, or until the sauce has thickened slightly.
- Remove from heat and stir in Parmesan cheese, flaked smoked salmon, dill, and parsley.
- Add the drained linguine to the skillet with the sauce. Toss to combine, adding a little reserved pasta water if needed to reach desired consistency.
- Season with salt and freshly ground black pepper to taste.
- Serve immediately.
Notes
- For a lighter sauce, you can use half-and-half instead of heavy cream.
- If you don’t have white wine, you can omit it or use a splash of lemon juice for acidity.
- Fresh herbs are highly recommended for the best flavor.
