Description

A quick and delicious pasta dish featuring smoked salmon, creamy sauce, and fresh herbs.


Ingredients

  • 1 pound linguine
  • 1 tablespoon olive oil
  • 1 shallot, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup dry white wine (optional)
  • 1 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 4 ounces smoked salmon, flaked
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons fresh parsley, chopped
  • Salt and freshly ground black pepper to taste


Instructions

  1. Cook linguine according to package directions. Reserve about 1 cup of pasta water before draining.
  2. While pasta is cooking, heat olive oil in a large skillet over medium heat. Add shallot and cook until softened, about 3-4 minutes.
  3. Add garlic and cook for 1 minute more until fragrant.
  4. If using, pour in white wine and let it simmer for 2 minutes, scraping up any browned bits from the bottom of the pan.
  5. Stir in heavy cream and bring to a gentle simmer. Cook for 3-5 minutes, or until the sauce has thickened slightly.
  6. Remove from heat and stir in Parmesan cheese, flaked smoked salmon, dill, and parsley.
  7. Add the drained linguine to the skillet with the sauce. Toss to combine, adding a little reserved pasta water if needed to reach desired consistency.
  8. Season with salt and freshly ground black pepper to taste.
  9. Serve immediately.

Notes

  • For a lighter sauce, you can use half-and-half instead of heavy cream.
  • If you don’t have white wine, you can omit it or use a splash of lemon juice for acidity.
  • Fresh herbs are highly recommended for the best flavor.
