A flavorful and easy slow cooker recipe for street corn chicken, perfect for a weeknight meal.
Ingredients
- 2 pounds boneless, skinless chicken breasts or thighs
- 1 (15 ounce) can corn, drained
- 1 (10 ounce) can diced tomatoes with green chilies, undrained
- 1 cup chicken broth
- 1 packet (1 ounce) taco seasoning
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Salt and pepper to taste
- Optional toppings: chopped cilantro, crumbled cotija cheese, lime wedges, sour cream, avocado
Instructions
- Place chicken breasts in the slow cooker.
- In a bowl, combine drained corn, diced tomatoes with green chilies, chicken broth, taco seasoning, chili powder, cumin, garlic powder, and onion powder.
- Pour the corn mixture over the chicken in the slow cooker.
- Season with salt and pepper to taste.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until chicken is cooked through and tender.
- Remove chicken from the slow cooker and shred with two forks.
- Return the shredded chicken to the slow cooker and stir to combine with the sauce.
- Serve hot, with optional toppings like chopped cilantro, crumbled cotija cheese, lime wedges, sour cream, and avocado.
Notes
- For a spicier dish, add a pinch of cayenne pepper or a diced jalapeño to the slow cooker.
- If using frozen chicken, it may take longer to cook.
