Description

A flavorful and easy slow cooker recipe for street corn chicken, perfect for a weeknight meal.


Ingredients

  • 2 pounds boneless, skinless chicken breasts or thighs
  • 1 (15 ounce) can corn, drained
  • 1 (10 ounce) can diced tomatoes with green chilies, undrained
  • 1 cup chicken broth
  • 1 packet (1 ounce) taco seasoning
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • Optional toppings: chopped cilantro, crumbled cotija cheese, lime wedges, sour cream, avocado


Instructions

  1. Place chicken breasts in the slow cooker.
  2. In a bowl, combine drained corn, diced tomatoes with green chilies, chicken broth, taco seasoning, chili powder, cumin, garlic powder, and onion powder.
  3. Pour the corn mixture over the chicken in the slow cooker.
  4. Season with salt and pepper to taste.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until chicken is cooked through and tender.
  6. Remove chicken from the slow cooker and shred with two forks.
  7. Return the shredded chicken to the slow cooker and stir to combine with the sauce.
  8. Serve hot, with optional toppings like chopped cilantro, crumbled cotija cheese, lime wedges, sour cream, and avocado.

Notes

  • For a spicier dish, add a pinch of cayenne pepper or a diced jalapeño to the slow cooker.
  • If using frozen chicken, it may take longer to cook.
