Ingredients
- 2 pounds boneless, skinless chicken breasts
- 1 (1.25 ounce) package taco seasoning
- 1 (4 ounce) can diced green chilies, undrained
- 1/2 cup chicken broth
- 1/4 cup chopped fresh cilantro, plus more for garnish
- 12 (6-inch) corn or flour tortillas
- Optional toppings: shredded lettuce, diced tomatoes, shredded cheese, sour cream, salsa, avocado
Instructions
- Place chicken breasts in a slow cooker.
- In a small bowl, mix taco seasoning, diced green chilies, and chicken broth. Pour over chicken.
- Cover and cook on low for 4-6 hours or on high for 2-3 hours, until chicken is cooked through and easily shredded.
- Remove chicken from slow cooker and shred with two forks.
- Return shredded chicken to the slow cooker and stir in chopped cilantro.
- Warm tortillas according to package directions.
- Serve shredded chicken in warm tortillas with your favorite toppings.
Notes
- For spicier tacos, add a pinch of cayenne pepper or a diced jalapeño to the slow cooker.
- If you don’t have taco seasoning, you can make your own with chili powder, cumin, paprika, garlic powder, and onion powder.
- Leftover chicken can be stored in an airtight container in the refrigerator for up to 3 days.
