Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 (1.25 ounce) package taco seasoning
  • 1 (4 ounce) can diced green chilies, undrained
  • 1/2 cup chicken broth
  • 1/4 cup chopped fresh cilantro, plus more for garnish
  • 12 (6-inch) corn or flour tortillas
  • Optional toppings: shredded lettuce, diced tomatoes, shredded cheese, sour cream, salsa, avocado


Instructions

  1. Place chicken breasts in a slow cooker.
  2. In a small bowl, mix taco seasoning, diced green chilies, and chicken broth. Pour over chicken.
  3. Cover and cook on low for 4-6 hours or on high for 2-3 hours, until chicken is cooked through and easily shredded.
  4. Remove chicken from slow cooker and shred with two forks.
  5. Return shredded chicken to the slow cooker and stir in chopped cilantro.
  6. Warm tortillas according to package directions.
  7. Serve shredded chicken in warm tortillas with your favorite toppings.

Notes

  • For spicier tacos, add a pinch of cayenne pepper or a diced jalapeño to the slow cooker.
  • If you don’t have taco seasoning, you can make your own with chili powder, cumin, paprika, garlic powder, and onion powder.
  • Leftover chicken can be stored in an airtight container in the refrigerator for up to 3 days.
