Description
A hearty and flavorful Cajun potato soup made easily in the slow cooker, perfect for a comforting meal.
Ingredients
- 2 lbs potatoes, peeled and cubed
- 1 lb smoked sausage, sliced
- 1 onion, chopped
- 2 bell peppers (any color), chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup milk
- 1/2 cup heavy cream
- 1/4 cup chopped fresh parsley
- 1 teaspoon Cajun seasoning
- Salt and pepper to taste
Instructions
- Place potatoes, sausage, onion, bell peppers, and garlic in the slow cooker.
- Pour in chicken broth and sprinkle with Cajun seasoning, salt, and pepper.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- About 30 minutes before serving, stir in milk and heavy cream.
- Continue to cook until heated through.
- Stir in fresh parsley just before serving.
Notes
- Adjust Cajun seasoning to your spice preference.
- For a thicker soup, you can mash some of the potatoes against the side of the slow cooker.
- Serve with crusty bread or oyster crackers.
