Description

A hearty and flavorful Cajun potato soup made easily in the slow cooker, perfect for a comforting meal.


Ingredients

  • 2 lbs potatoes, peeled and cubed
  • 1 lb smoked sausage, sliced
  • 1 onion, chopped
  • 2 bell peppers (any color), chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup milk
  • 1/2 cup heavy cream
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon Cajun seasoning
  • Salt and pepper to taste


Instructions

  1. Place potatoes, sausage, onion, bell peppers, and garlic in the slow cooker.
  2. Pour in chicken broth and sprinkle with Cajun seasoning, salt, and pepper.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  4. About 30 minutes before serving, stir in milk and heavy cream.
  5. Continue to cook until heated through.
  6. Stir in fresh parsley just before serving.

Notes

  • Adjust Cajun seasoning to your spice preference.
  • For a thicker soup, you can mash some of the potatoes against the side of the slow cooker.
