A simple and delicious slow cooker recipe for beef and broccoli, perfect for an easy weeknight dinner.
Ingredients
- 2 lbs beef chuck roast, trimmed and cut into 1-inch pieces
- 1 cup beef broth
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 1 teaspoon cornstarch
- 1/4 cup water
- 1 lb broccoli florets
- Cooked rice, for serving
Instructions
- Place beef in the slow cooker.
- In a bowl, whisk together beef broth, soy sauce, brown sugar, garlic, and ginger. Pour over beef.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until beef is tender.
- In a small bowl, whisk together cornstarch and water until smooth.
- Stir the cornstarch mixture into the slow cooker.
- Add broccoli florets to the slow cooker.
- Cover and cook on high for an additional 20-30 minutes, or until broccoli is tender-crisp.
- Serve beef and broccoli over cooked rice.
Notes
- For a thicker sauce, you can increase the cornstarch to 1.5 teaspoons.
- Feel free to add other vegetables like carrots or bell peppers.
- Adjust the brown sugar to your desired sweetness.
