A simple and delicious slow cooker recipe for beef and broccoli, perfect for an easy weeknight dinner.


Ingredients

  • 2 lbs beef chuck roast, trimmed and cut into 1-inch pieces
  • 1 cup beef broth
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon cornstarch
  • 1/4 cup water
  • 1 lb broccoli florets
  • Cooked rice, for serving


Instructions

  1. Place beef in the slow cooker.
  2. In a bowl, whisk together beef broth, soy sauce, brown sugar, garlic, and ginger. Pour over beef.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until beef is tender.
  4. In a small bowl, whisk together cornstarch and water until smooth.
  5. Stir the cornstarch mixture into the slow cooker.
  6. Add broccoli florets to the slow cooker.
  7. Cover and cook on high for an additional 20-30 minutes, or until broccoli is tender-crisp.
  8. Serve beef and broccoli over cooked rice.

Notes

  • For a thicker sauce, you can increase the cornstarch to 1.5 teaspoons.
  • Feel free to add other vegetables like carrots or bell peppers.
