Description

A quick and flavorful one-pan meal featuring shrimp, sausage, and a medley of fresh vegetables, perfect for a weeknight dinner.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound large shrimp, peeled and deveined
  • 1 pound smoked sausage, sliced
  • 1 medium onion, chopped
  • 2 bell peppers (any color), chopped
  • 1 cup broccoli florets
  • 1 cup cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried Italian seasoning
  • Salt and freshly ground black pepper to taste


Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add shrimp and cook until pink and opaque, about 2-3 minutes per side. Remove shrimp from skillet and set aside.
  3. Add sausage to the skillet and cook until browned, about 5 minutes.
  4. Add onion and bell peppers to the skillet and cook until tender-crisp, about 5-7 minutes.
  5. Stir in broccoli florets, cherry tomatoes, and minced garlic. Cook for another 3-5 minutes, or until broccoli is tender-crisp and tomatoes have softened.
  6. Return the cooked shrimp to the skillet.
  7. Season with Italian seasoning, salt, and pepper. Stir to combine and heat through.
  8. Serve immediately.

Notes

  • For extra flavor, add a pinch of red pepper flakes.
  • Feel free to substitute other vegetables like zucchini, mushrooms, or spinach.
