Description
A quick and flavorful one-pan meal featuring shrimp, sausage, and a medley of fresh vegetables, perfect for a weeknight dinner.
Ingredients
- 1 tablespoon olive oil
- 1 pound large shrimp, peeled and deveined
- 1 pound smoked sausage, sliced
- 1 medium onion, chopped
- 2 bell peppers (any color), chopped
- 1 cup broccoli florets
- 1 cup cherry tomatoes, halved
- 2 cloves garlic, minced
- 1/2 teaspoon dried Italian seasoning
- Salt and freshly ground black pepper to taste
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add shrimp and cook until pink and opaque, about 2-3 minutes per side. Remove shrimp from skillet and set aside.
- Add sausage to the skillet and cook until browned, about 5 minutes.
- Add onion and bell peppers to the skillet and cook until tender-crisp, about 5-7 minutes.
- Stir in broccoli florets, cherry tomatoes, and minced garlic. Cook for another 3-5 minutes, or until broccoli is tender-crisp and tomatoes have softened.
- Return the cooked shrimp to the skillet.
- Season with Italian seasoning, salt, and pepper. Stir to combine and heat through.
- Serve immediately.
Notes
- For extra flavor, add a pinch of red pepper flakes.
- Feel free to substitute other vegetables like zucchini, mushrooms, or spinach.
- Serve as is, or over rice or quinoa.
