Description

A quick and easy one-pan meal featuring savory sausage and wholesome cauliflower rice, perfect for a weeknight dinner.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound smoked sausage, sliced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (10 ounce) package frozen riced cauliflower
  • 1/2 cup chicken broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh parsley, for garnish (optional)


Instructions

  1. Heat olive oil in a large skillet or Dutch oven over medium-high heat.
  2. Add sausage and cook until browned, about 5-7 minutes. Remove sausage from skillet and set aside, leaving drippings in the skillet.
  3. Add onion to the skillet and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more until fragrant.
  4. Stir in the riced cauliflower and chicken broth. Bring to a simmer.
  5. Reduce heat to medium-low, cover, and cook for 5-7 minutes, or until cauliflower is tender.
  6. Return the sausage to the skillet. Season with salt and pepper. Stir to combine and heat through.
  7. Garnish with fresh parsley, if desired. Serve hot.

Notes

  • You can use any type of pre-cooked sausage you prefer.
  • Feel free to add other vegetables like bell peppers, peas, or corn.
  • For a spicier dish, add a pinch of red pepper flakes with the garlic.
