Description
A quick and easy one-pan meal featuring savory sausage and wholesome cauliflower rice, perfect for a weeknight dinner.
Ingredients
- 1 tablespoon olive oil
- 1 pound smoked sausage, sliced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 (10 ounce) package frozen riced cauliflower
- 1/2 cup chicken broth
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh parsley, for garnish (optional)
Instructions
- Heat olive oil in a large skillet or Dutch oven over medium-high heat.
- Add sausage and cook until browned, about 5-7 minutes. Remove sausage from skillet and set aside, leaving drippings in the skillet.
- Add onion to the skillet and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more until fragrant.
- Stir in the riced cauliflower and chicken broth. Bring to a simmer.
- Reduce heat to medium-low, cover, and cook for 5-7 minutes, or until cauliflower is tender.
- Return the sausage to the skillet. Season with salt and pepper. Stir to combine and heat through.
- Garnish with fresh parsley, if desired. Serve hot.
Notes
- You can use any type of pre-cooked sausage you prefer.
- Feel free to add other vegetables like bell peppers, peas, or corn.
- For a spicier dish, add a pinch of red pepper flakes with the garlic.
