A creamy and flavorful rotisserie chicken mushroom soup, perfect for a comforting meal.
Ingredients
- 1 tablespoon olive oil
- 1 cup chopped yellow onion
- 2 cloves garlic, minced
- 8 ounces cremini mushrooms, sliced
- 4 cups rotisserie chicken, shredded
- 4 cups chicken broth
- 1 cup half-and-half
- 1/4 cup chopped fresh parsley
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes.
- Add garlic and mushrooms and cook until mushrooms are browned, about 8-10 minutes.
- Stir in shredded rotisserie chicken and chicken broth. Bring to a simmer, then reduce heat and cook for 10 minutes.
- Stir in half-and-half and parsley. Heat through, but do not boil.
- Season with salt and pepper to taste.
Notes
- For a thicker soup, you can whisk in a tablespoon of flour with the onions and cook for a minute before adding the broth.
- Feel free to add other vegetables like carrots or celery along with the onions.
- Garnish with extra parsley or a swirl of cream before serving.
