Ingredients

  • 1 tablespoon olive oil
  • 1 cup chopped yellow onion
  • 2 cloves garlic, minced
  • 8 ounces cremini mushrooms, sliced
  • 4 cups rotisserie chicken, shredded
  • 4 cups chicken broth
  • 1 cup half-and-half
  • 1/4 cup chopped fresh parsley
  • Salt and black pepper to taste


Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes.
  2. Add garlic and mushrooms and cook until mushrooms are browned, about 8-10 minutes.
  3. Stir in shredded rotisserie chicken and chicken broth. Bring to a simmer, then reduce heat and cook for 10 minutes.
  4. Stir in half-and-half and parsley. Heat through, but do not boil.
  5. Season with salt and pepper to taste.
