A rich and creamy soup made with savory rotisserie chicken and earthy mushrooms, perfect for a comforting meal.
Ingredients
- 1 tablespoon olive oil
- 1 cup chopped yellow onion
- 2 cloves garlic, minced
- 8 ounces cremini mushrooms, sliced
- 4 cups chicken broth
- 2 cups shredded rotisserie chicken
- 1/2 cup heavy cream
- 1/4 cup chopped fresh parsley
- Salt and freshly ground black pepper to taste
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes.
- Add garlic and mushrooms and cook until mushrooms are browned and tender, about 8-10 minutes.
- Pour in chicken broth and bring to a simmer.
- Stir in shredded rotisserie chicken and cook for 5 minutes, or until heated through.
- Reduce heat to low and stir in heavy cream and parsley.
- Season with salt and pepper to taste.
- Serve hot.
Notes
- For a thicker soup, you can add a slurry of 1 tablespoon cornstarch mixed with 2 tablespoons cold water.
- Feel free to add other vegetables like carrots or celery along with the onions.
- Garnish with extra parsley or a dollop of sour cream.
