Ingredients
- 1 pound mixed root vegetables (carrots, parsnips, sweet potatoes, potatoes), peeled and cut into 1-inch pieces
- 2 tablespoons olive oil
- 1 teaspoon dried rosemary
- 1/2 teaspoon dried thyme
- Salt and freshly ground black pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss the root vegetables with olive oil, rosemary, thyme, salt, and pepper until evenly coated.
- Spread the vegetables in a single layer on a baking sheet.
- Roast for 30-40 minutes, or until tender and slightly caramelized, flipping halfway through.
- Serve hot.
