Ingredients

  • 1 1/2 pounds medium carrots, peeled and trimmed
  • 2 tablespoons olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 (8 ounce) block feta cheese, drained
  • 1/4 cup plain Greek yogurt
  • 2 tablespoons finely chopped fresh dill
  • 2 tablespoons extra virgin olive oil, plus more for drizzling
  • 1 tablespoon lemon juice
  • 1/2 teaspoon lemon zest
  • 1/4 teaspoon red pepper flakes, optional


Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss the carrots with 2 tablespoons of olive oil, salt, and pepper until evenly coated.
  3. Spread the seasoned carrots in a single layer on a large rimmed baking sheet.
  4. Roast for 20 to 30 minutes, or until the carrots are tender and slightly caramelized.
  5. While the carrots are roasting, prepare the whipped feta. In a food processor, combine the drained feta cheese, Greek yogurt, dill, extra virgin olive oil, lemon juice, lemon zest, and red pepper flakes (if using).
  6. Process until the mixture is completely smooth and creamy, scraping down the sides as needed.
  7. Once the carrots are finished roasting, remove them from the oven.
  8. To serve, spread the whipped feta onto a serving platter or shallow bowl.
  9. Arrange the roasted carrots over the whipped feta.
  10. Drizzle the carrots with a little extra virgin olive oil, if desired.
  11. Serve immediately and enjoy!

Notes

  • Medium-sized carrots work best for this recipe as they roast evenly. If using very thick carrots, cut them in half lengthwise.
  • For a richer flavor, use high-quality feta cheese, preferably one packed in brine.
  • The whipped feta can be prepared up to 1 day in advance and stored in the refrigerator. Let it come to room temperature for about 15 minutes before serving for the best texture.
