Description
A sophisticated side dish featuring tender roasted carrots paired with a tangy, creamy whipped feta dip.
Ingredients
- 1 1/2 pounds medium carrots, peeled and trimmed
- 2 tablespoons olive oil
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1 (8 ounce) block feta cheese, drained
- 1/4 cup plain Greek yogurt
- 2 tablespoons finely chopped fresh dill
- 2 tablespoons extra virgin olive oil, plus more for drizzling
- 1 tablespoon lemon juice
- 1/2 teaspoon lemon zest
- 1/4 teaspoon red pepper flakes, optional
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss the carrots with 2 tablespoons of olive oil, salt, and pepper until evenly coated.
- Spread the seasoned carrots in a single layer on a large rimmed baking sheet.
- Roast for 20 to 30 minutes, or until the carrots are tender and slightly caramelized.
- While the carrots are roasting, prepare the whipped feta. In a food processor, combine the drained feta cheese, Greek yogurt, dill, extra virgin olive oil, lemon juice, lemon zest, and red pepper flakes (if using).
- Process until the mixture is completely smooth and creamy, scraping down the sides as needed.
- Once the carrots are finished roasting, remove them from the oven.
- To serve, spread the whipped feta onto a serving platter or shallow bowl.
- Arrange the roasted carrots over the whipped feta.
- Drizzle the carrots with a little extra virgin olive oil, if desired.
- Serve immediately and enjoy!
Notes
- Medium-sized carrots work best for this recipe as they roast evenly. If using very thick carrots, cut them in half lengthwise.
- For a richer flavor, use high-quality feta cheese, preferably one packed in brine.
- The whipped feta can be prepared up to 1 day in advance and stored in the refrigerator. Let it come to room temperature for about 15 minutes before serving for the best texture.
