Ingredients
- 2 lbs baby potatoes, washed and halved or quartered if large
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/4 teaspoon dried rosemary (optional)
- 1/4 teaspoon dried thyme (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the baby potatoes with olive oil, salt, pepper, garlic powder, rosemary, and thyme (if using) until evenly coated.
- Spread the potatoes in a single layer on a baking sheet.
- Roast for 30-40 minutes, or until the potatoes are tender and golden brown, flipping them halfway through.
- Serve hot.

- For extra crispy potatoes, ensure they are dry before tossing with oil.
