Description

Delicious and easy-to-make pumpkin pie cookies that capture the essence of your favorite fall dessert in a bite-sized treat.

Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon pumpkin pie spice
  • 1/2 cup pumpkin puree (not pumpkin pie filling)

Instructions

  1. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  2. Beat in the egg and vanilla extract until well combined.
  3. In a separate bowl, whisk together the flour, baking powder, salt, and pumpkin pie spice.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Stir in the pumpkin puree until evenly distributed.
  6. Cover the dough and chill for at least 30 minutes.
  7. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  8. Drop rounded tablespoons of dough onto the prepared baking sheets, about 2 inches apart.
  9. Bake for 10-12 minutes, or until the edges are lightly golden.
  10. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • Ensure you use pumpkin puree and not pumpkin pie filling, as the latter contains added spices and sugar.
  • Chill the dough sufficiently to prevent the cookies from spreading too much during baking.
  • These cookies are delicious on their own or can be frosted with a cream cheese frosting for an extra treat.
