Ingredients
- 1 cup pumpkin puree
- 4 large eggs
- 1/2 cup milk (or half-and-half)
- 1/4 cup granulated sugar
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 8 slices of thick-cut bread (brioche, challah, or Texas toast recommended)

Instructions
- In a shallow dish or pie plate, whisk together the pumpkin puree, eggs, milk, sugar, pumpkin pie spice, vanilla extract, and salt until well combined and smooth.

- Heat a lightly oiled griddle or non-stick frying pan over medium heat.
