  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/3 cup evaporated milk
  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) cold unsalted butter, cut into small pieces
  • Optional: Chopped pecans or walnuts for topping


Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×9 inch baking dish.
  2. In a medium bowl, combine pumpkin puree, 1/2 cup brown sugar, granulated sugar, pumpkin pie spice, 1/2 teaspoon cinnamon, nutmeg, and 1/2 teaspoon salt. Mix well.
  3. Beat in the eggs one at a time until well combined. Stir in the evaporated milk. Pour the pumpkin mixture into the prepared baking dish.
  4. In a separate medium bowl, combine flour, rolled oats, 1/2 cup brown sugar, 1 teaspoon cinnamon, 1/2 teaspoon nutmeg, ginger, and 1/4 teaspoon salt. Whisk to combine.
  5. Cut in the cold butter using a pastry blender, fork, or your fingertips until the mixture resembles coarse crumbs. If desired, stir in chopped nuts.
  6. Sprinkle the oat topping evenly over the pumpkin mixture in the baking dish.
