Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 (15-ounce) can pumpkin puree
  • For the Frosting:
  • 1/2 cup (1 stick) unsalted butter, softened
  • 3 cups powdered sugar
  • 1/4 cup milk
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract


Instructions

  1. Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, cloves, and salt.
  3. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract and pumpkin puree until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Drop rounded tablespoons of dough onto the prepared baking sheets, about 2 inches apart.
  7. Bake for 10-12 minutes, or until the edges are lightly golden and the centers are set.
  8. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  9. While the cookies are cooling, prepare the frosting: In a medium bowl, beat the softened butter until creamy.
  10. Gradually add the powdered sugar, alternating with the milk, until the frosting is smooth and spreadable.
  11. Stir in the cinnamon and vanilla extract.
  12. Once the cookies are completely cool, spread or pipe the cinnamon frosting onto the tops of the cookies.

Notes

  • Ensure your pumpkin puree is not pumpkin pie filling.
  • Do not overbake the cookies, as they will become too hard.
  • Adjust the amount of milk in the frosting to achieve your desired consistency.
  • For a stronger cinnamon flavor in the frosting, add an extra pinch of cinnamon.
