Deliciously crispy pumpkin cookies topped with a warm and inviting cinnamon frosting.
Ingredients
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/4 teaspoon salt
- 1 cup (2 sticks) unsalted butter, softened
- 3/4 cup granulated sugar
- 3/4 cup packed light brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 (15-ounce) can pumpkin puree
- For the Frosting:
- 1/2 cup (1 stick) unsalted butter, softened
- 3 cups powdered sugar
- 1/4 cup milk
- 1 teaspoon ground cinnamon
- 1/2 teaspoon vanilla extract
Instructions
- Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, cloves, and salt.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract and pumpkin puree until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Drop rounded tablespoons of dough onto the prepared baking sheets, about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are lightly golden and the centers are set.
- Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
- While the cookies are cooling, prepare the frosting: In a medium bowl, beat the softened butter until creamy.
- Gradually add the powdered sugar, alternating with the milk, until the frosting is smooth and spreadable.
- Stir in the cinnamon and vanilla extract.
- Once the cookies are completely cool, spread or pipe the cinnamon frosting onto the tops of the cookies.
Notes
- Ensure your pumpkin puree is not pumpkin pie filling.
- Do not overbake the cookies, as they will become too hard.
- Adjust the amount of milk in the frosting to achieve your desired consistency.
- For a stronger cinnamon flavor in the frosting, add an extra pinch of cinnamon.
