Ingredients

  • Beef chuck roast (3-4 pounds)
  • 1 cup beef broth
  • 1/2 cup red wine (optional)
  • 2 tablespoons Worcestershire sauce

  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and black pepper to taste
  • 2 pounds potatoes, cut into chunks
  • 1 pound carrots, cut into chunks

  • 2 cloves garlic, minced


Instructions

  1. Place the beef roast in the crock pot.
  2. In a bowl, whisk together beef broth, red wine (if using), Worcestershire sauce, soy sauce, thyme, rosemary, salt, and pepper.
  3. Pour the liquid mixture over the roast.
  4. Add the potatoes, carrots, onion, and garlic around the roast.
