This recipe provides instructions for making a tender and easy pot roast in a crock pot, perfect for a comforting meal.
Ingredients
- Beef chuck roast (3-4 pounds)
- 1 cup beef broth
- 1/2 cup red wine (optional)
- 2 tablespoons Worcestershire sauce
- 1 tablespoon soy sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and black pepper to taste
- 2 pounds potatoes, cut into chunks
- 1 pound carrots, cut into chunks
- 1 large onion, cut into wedges
- 2 cloves garlic, minced
Instructions
- Place the beef roast in the crock pot.
- In a bowl, whisk together beef broth, red wine (if using), Worcestershire sauce, soy sauce, thyme, rosemary, salt, and pepper.
- Pour the liquid mixture over the roast.
- Add the potatoes, carrots, onion, and garlic around the roast.
- Cover and cook on low for 8-10 hours or on high for 4-5 hours, until the roast is tender.
- Remove the roast and vegetables from the crock pot. Shred or slice the roast.
- Serve the pot roast with the vegetables and cooking liquid.
Notes
- For a thicker gravy, you can mix 2 tablespoons of cornstarch with 1/4 cup of cold water and stir it into the crock pot liquid during the last 30 minutes of cooking.
- You can add other root vegetables like parsnips or celery if desired.
- Ensure the roast is fully submerged in the liquid for even cooking.
