Ingredients
- 1 cup white rice
- 2 cups chicken broth
- 1/2 cup chopped yellow onion
- 1/4 cup chopped green bell pepper
- 1/4 cup chopped celery
- 2 cloves garlic, minced
- 2 tablespoons butter
- 1 tablespoon all-purpose flour
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- 1/4 cup chopped fresh parsley
Instructions
- In a large skillet, melt butter over medium heat. Add onion, bell pepper, and celery. Cook until softened, about 5-7 minutes.
- Add minced garlic and cook for 1 minute more until fragrant.
- Stir in flour and cook for 1 minute, stirring constantly.
- Gradually whisk in chicken broth until smooth.
- Stir in Cajun seasoning, salt, black pepper, and cayenne pepper. Bring to a simmer.
- Add white rice to the skillet and stir to combine.
- Cover the skillet, reduce heat to low, and simmer for 20-25 minutes, or until rice is cooked and liquid is absorbed.
- Stir in fresh parsley before serving.
Notes
- For a spicier kick, add more cayenne pepper to taste.
- You can substitute vegetable broth for chicken broth for a vegetarian option.
