Ingredients
- 1 ripe pineapple, peeled, cored, and cubed
- 1 large cucumber, peeled, seeded, and diced
- 1/2 red onion, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 1/4 cup fresh mint, chopped
- 2 tablespoons lime juice
- 1 tablespoon olive oil
- Salt and freshly ground black pepper to taste
Instructions
- In a large bowl, combine the cubed pineapple, diced cucumber, and sliced red onion.
- Gently toss the ingredients together.
- In a small bowl, whisk together the lime juice and olive oil. Season with salt and pepper.
- Pour the dressing over the salad and toss to coat evenly.
- Stir in the chopped cilantro and mint.
- Chill for at least 15 minutes before serving to allow the flavors to meld.
Notes
- For an extra kick, add a pinch of red pepper flakes to the dressing.
- You can substitute green onions for red onion if preferred.
