Ingredients

  • 1 ripe pineapple, peeled, cored, and cubed
  • 1 large cucumber, peeled, seeded, and diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh mint, chopped
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper to taste


Instructions

  1. In a large bowl, combine the cubed pineapple, diced cucumber, and sliced red onion.
