Ingredients
- 1 ripe pineapple, peeled, cored, and diced
- 2 cucumbers, peeled, seeded, and diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons lime juice
- 1 tablespoon olive oil
- Salt and freshly ground black pepper to taste
Instructions
- In a large bowl, combine the diced pineapple, diced cucumber, and chopped red onion.
- Add the chopped mint and cilantro to the bowl.
- In a small bowl, whisk together the lime juice and olive oil.
- Pour the dressing over the salad ingredients.
- Gently toss to combine.
- Season with salt and pepper to taste.
