A quick and easy recipe for delicious Pesto Gnocchi, bringing the authentic taste of Italy to your table.
Ingredients
- 1 pound potato gnocchi
- 1/2 cup prepared pesto
- 2 tablespoons olive oil
- 1/4 cup grated Parmesan cheese
- Salt and freshly ground black pepper to taste
- Optional: pine nuts, cherry tomatoes, fresh basil for garnish
Instructions
- Cook the gnocchi according to package directions. Drain, reserving about 1/2 cup of the cooking water.
- While the gnocchi is cooking, heat the olive oil in a large skillet over medium heat.
- Add the drained gnocchi to the skillet and sauté for 2-3 minutes until lightly golden.
- Stir in the prepared pesto and toss to coat the gnocchi evenly.
- If the sauce is too thick, add a little of the reserved cooking water, a tablespoon at a time, until it reaches your desired consistency.
- Stir in the grated Parmesan cheese. Season with salt and freshly ground black pepper to taste.
- Serve immediately, garnished with optional pine nuts, cherry tomatoes, and fresh basil if desired.
Notes
- For a richer flavor, you can make your own pesto from scratch.
- Ensure the gnocchi is cooked al dente; overcooked gnocchi can become mushy.
