Ingredients

  • 1 pound potato gnocchi
  • 1/2 cup prepared pesto
  • 2 tablespoons olive oil
  • 1/4 cup grated Parmesan cheese
  • Salt and freshly ground black pepper to taste
  • Optional: pine nuts, cherry tomatoes, fresh basil for garnish


Instructions

  1. Cook the gnocchi according to package directions. Drain, reserving about 1/2 cup of the cooking water.
  2. While the gnocchi is cooking, heat the olive oil in a large skillet over medium heat.
  3. Add the drained gnocchi to the skillet and sauté for 2-3 minutes until lightly golden.
  4. Stir in the prepared pesto and toss to coat the gnocchi evenly.
  5. If the sauce is too thick, add a little of the reserved cooking water, a tablespoon at a time, until it reaches your desired consistency.
  6. Stir in the grated Parmesan cheese. Season with salt and freshly ground black pepper to taste.
  7. Serve immediately, garnished with optional pine nuts, cherry tomatoes, and fresh basil if desired.
