Ingredients
- 8 large flour tortillas
- 1 cup pizza sauce
- 2 cups shredded mozzarella cheese
- 1 cup sliced pepperoni
- 1/4 cup grated Parmesan cheese
- 2 tablespoons olive oil or butter, for cooking
Instructions
- Lay out four tortillas. Spread about 2 tablespoons of pizza sauce evenly over each tortilla, leaving a small border.
- Sprinkle 1/4 cup of mozzarella cheese and a few slices of pepperoni over the sauce on each tortilla.
- Sprinkle 1 tablespoon of Parmesan cheese over the pepperoni.
- Top each with another tortilla to create a sandwich.
- Heat 1 teaspoon of olive oil or butter in a large non-stick skillet or griddle over medium heat.
- Carefully place one or two pizzadillas in the skillet (do not overcrowd). Cook for 3-5 minutes per side, until the tortillas are golden brown and crispy, and the cheese is melted and gooey.
- Remove from skillet and repeat with the remaining pizzadillas, adding more oil or butter as needed.
- Cut each pizzadilla in half or into wedges and serve immediately.

- Ensure the heat is medium to prevent burning the tortillas before the cheese melts.
