Ingredients

  • 8 large flour tortillas
  • 1 cup pizza sauce
  • 2 cups shredded mozzarella cheese
  • 1 cup sliced pepperoni
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil or butter, for cooking


Instructions

  1. Lay out four tortillas. Spread about 2 tablespoons of pizza sauce evenly over each tortilla, leaving a small border.
  2. Sprinkle 1/4 cup of mozzarella cheese and a few slices of pepperoni over the sauce on each tortilla.
  3. Sprinkle 1 tablespoon of Parmesan cheese over the pepperoni.
  4. Top each with another tortilla to create a sandwich.
  5. Heat 1 teaspoon of olive oil or butter in a large non-stick skillet or griddle over medium heat.
  6. Carefully place one or two pizzadillas in the skillet (do not overcrowd). Cook for 3-5 minutes per side, until the tortillas are golden brown and crispy, and the cheese is melted and gooey.
  7. Remove from skillet and repeat with the remaining pizzadillas, adding more oil or butter as needed.
  8. Cut each pizzadilla in half or into wedges and serve immediately.
