Ingredients
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 8 cups chicken broth
- 1 cup cooked shredded chicken
- 1/2 cup small pasta (like ditalini or orzo)
- 1/4 cup chopped fresh parsley
- 1 tablespoon lemon juice
- Salt and freshly ground black pepper to taste
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, carrots, and celery. Cook, stirring occasionally, until softened, about 5-7 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- Pour in chicken broth and bring to a boil.
- Add cooked shredded chicken and pasta. Reduce heat and simmer until pasta is cooked through, about 8-10 minutes.
- Stir in fresh parsley and lemon juice.
- Season with salt and pepper to taste.
- Serve hot.
Notes
- For an extra boost, add a pinch of red pepper flakes.
- Feel free to add other vegetables like spinach or zucchini.
- If you don’t have pre-cooked chicken, you can poach chicken breasts directly in the broth before adding the pasta.
