Description

A delightful fusion of classic pecan pie and comforting cobbler, this Pecan Pie Cobbler offers a rich, nutty filling topped with a tender, biscuit-like crust. It’s a perfect dessert for any occasion, bringing together the best of both worlds.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup unsalted butter, melted
  • 1 cup packed light brown sugar
  • 1/2 cup unsalted butter, cut into pieces
  • 1/2 cup light corn syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups chopped pecans

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a medium bowl, whisk together flour, granulated sugar, baking powder, and salt.
  3. In a separate bowl, combine milk and melted butter. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  4. Pour the batter evenly into the prepared baking dish.
  5. In a saucepan over medium heat, combine brown sugar, 1/2 cup butter, and corn syrup. Stir until the butter is melted and the mixture is smooth.
  6. In a small bowl, whisk the eggs and vanilla extract. Gradually whisk the egg mixture into the warm brown sugar mixture until well combined.
  7. Stir in the chopped pecans.
  8. Pour the pecan mixture evenly over the batter in the baking dish.
  9. Bake for 40-50 minutes, or until the topping is golden brown and a toothpick inserted into the cobbler part comes out clean.
  10. Let cool slightly before serving.

Notes

  • Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream for an extra decadent treat.
  • For a richer flavor, you can use dark corn syrup.
  • Ensure the batter is spread evenly before pouring the pecan mixture to guarantee a balanced texture.
