Ingredients
- 1.5 lbs baby potatoes, halved or quartered if large
- 2 tablespoons olive oil
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried rosemary
- 1/2 teaspoon garlic powder
- Salt and freshly ground black pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the baby potatoes with olive oil, dried rosemary, garlic powder, salt, and pepper until evenly coated.
- Spread the potatoes in a single layer on a baking sheet.
- Roast for 20-25 minutes, or until the potatoes are tender and golden brown.
- Remove the baking sheet from the oven and sprinkle the grated Parmesan cheese over the potatoes.
- Return to the oven for another 5-7 minutes, or until the Parmesan is melted and lightly browned.
- Serve hot.
Notes
- For extra crispiness, you can parboil the potatoes for 5-7 minutes before tossing them with oil and seasonings.
- Feel free to add other herbs like thyme or oregano.
- A pinch of red pepper flakes can add a touch of heat.
