Ingredients

  • 1.5 lbs baby potatoes, halved or quartered if large
  • 2 tablespoons olive oil
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon garlic powder
  • Salt and freshly ground black pepper to taste


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the baby potatoes with olive oil, dried rosemary, garlic powder, salt, and pepper until evenly coated.
  3. Spread the potatoes in a single layer on a baking sheet.
  4. Roast for 20-25 minutes, or until the potatoes are tender and golden brown.
  5. Remove the baking sheet from the oven and sprinkle the grated Parmesan cheese over the potatoes.
  6. Return to the oven for another 5-7 minutes, or until the Parmesan is melted and lightly browned.
