A delightful fall treat featuring fluffy pancakes topped with a warm and comforting caramel apple compote.
Ingredients
- For the Pancakes:
- 1 1/2 cups all-purpose flour
- 3 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1 tablespoon white sugar
- 1 1/4 cups milk
- 1 1/4 cups beaten egg (about 2 large eggs)
- 3 tablespoons butter, melted
- For the Caramel Apple Compote:
- 2 tablespoons butter
- 4 cups peeled, cored, and chopped apples (about 4 medium apples)
- 1/2 cup packed brown sugar
- 1/4 cup water
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/8 teaspoon ground cloves
- 1/4 cup caramel sauce (store-bought or homemade)
Instructions
- For the Caramel Apple Compote: In a large skillet, melt 2 tablespoons of butter over medium heat. Add the chopped apples and cook until slightly softened, about 5-7 minutes.
- Stir in the brown sugar, water, cinnamon, nutmeg, and cloves. Bring to a simmer, then reduce heat and cook, stirring occasionally, until the apples are tender and the sauce has thickened, about 10-15 minutes.
- Remove from heat and stir in the caramel sauce. Set aside.
- For the Pancakes: In a large bowl, sift together the flour, baking powder, salt, and sugar.
- In a separate bowl, whisk together the milk, beaten egg, and melted butter.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
- Heat a lightly oiled griddle or frying pan over medium-high heat.
- Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
- Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
- Serve pancakes warm, topped with the caramel apple compote.
Notes
- You can adjust the spices in the compote to your preference.
- For a richer caramel flavor, use homemade caramel sauce.
- Serve with a dollop of whipped cream or a scoop of vanilla ice cream for an extra decadent treat.
- Leftover compote can be stored in the refrigerator for up to 3 days and reheated.
