Ingredients

  • 1 1/4 cups beaten egg (about 2 large eggs)
  • 3 tablespoons butter, melted
  • For the Caramel Apple Compote:
  • 2 tablespoons butter
  • 4 cups peeled, cored, and chopped apples (about 4 medium apples)
  • 1/2 cup packed brown sugar
  • 1/4 cup water
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • 1/4 cup caramel sauce (store-bought or homemade)


Instructions

  1. For the Caramel Apple Compote: In a large skillet, melt 2 tablespoons of butter over medium heat. Add the chopped apples and cook until slightly softened, about 5-7 minutes.
  2. Stir in the brown sugar, water, cinnamon, nutmeg, and cloves. Bring to a simmer, then reduce heat and cook, stirring occasionally, until the apples are tender and the sauce has thickened, about 10-15 minutes.
  3. Remove from heat and stir in the caramel sauce. Set aside.
  4. For the Pancakes: In a large bowl, sift together the flour, baking powder, salt, and sugar.
  5. In a separate bowl, whisk together the milk, beaten egg, and melted butter.
  6. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
  7. Heat a lightly oiled griddle or frying pan over medium-high heat.
  8. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
  9. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
  10. Serve pancakes warm, topped with the caramel apple compote.
