Ingredients

  • 1 lb Brussels sprouts, trimmed and halved
  • 1 large sweet potato, peeled and cubed
  • 1 red onion, cut into wedges
  • 2 tbsp olive oil
  • 1 tsp dried rosemary
  • 1/2 tsp dried thyme
  • 1/4 tsp cinnamon
  • Salt and black pepper to taste
  • Optional: 1/4 cup chopped pecans or walnuts


Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss Brussels sprouts, sweet potato, and red onion with olive oil, rosemary, thyme, cinnamon, salt, and pepper.
  3. Spread the vegetables in a single layer on a baking sheet.
  4. Roast for 25-30 minutes, or until vegetables are tender and slightly caramelized, flipping halfway through.
  5. If using, sprinkle with nuts during the last 5 minutes of roasting.
  6. Serve hot.
