Ingredients
- 1 lb Brussels sprouts, trimmed and halved
- 1 large sweet potato, peeled and cubed
- 1 red onion, cut into wedges
- 2 tbsp olive oil
- 1 tsp dried rosemary
- 1/2 tsp dried thyme
- 1/4 tsp cinnamon
- Salt and black pepper to taste
- Optional: 1/4 cup chopped pecans or walnuts
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss Brussels sprouts, sweet potato, and red onion with olive oil, rosemary, thyme, cinnamon, salt, and pepper.
- Spread the vegetables in a single layer on a baking sheet.
- Roast for 25-30 minutes, or until vegetables are tender and slightly caramelized, flipping halfway through.
- If using, sprinkle with nuts during the last 5 minutes of roasting.
- Serve hot.
Notes
- For extra sweetness, you can add a drizzle of maple syrup in the last 10 minutes of baking.
- Feel free to add other fall vegetables like carrots or butternut squash.
