Description

A hearty and flavorful lasagna soup that can be made in just one pot, perfect for a quick and comforting weeknight meal.

Ingredients

  • 1 lb ground beef or Italian sausage
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can tomato sauce
  • 4 cups beef broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup lasagna noodles, broken
  • 1/2 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup shredded mozzarella cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot or Dutch oven, brown the ground beef or sausage over medium-high heat. Drain off any excess grease.
  2. Add the chopped onion and cook until softened, about 5 minutes.
  3. Stir in the minced garlic and cook for 1 minute more until fragrant.
  4. Pour in the crushed tomatoes, tomato sauce, and beef broth.
  5. Season with dried basil, oregano, salt, and pepper. Bring the mixture to a boil.
  6. Add the broken lasagna noodles and stir. Reduce heat to medium-low, cover, and simmer for 10-12 minutes, or until the noodles are tender, stirring occasionally to prevent sticking.
  7. In a small bowl, mix together the ricotta cheese, Parmesan cheese, and mozzarella cheese.
  8. Ladle the soup into bowls. Top each serving with a dollop of the cheese mixture and a sprinkle of fresh parsley.

Notes

  • For a vegetarian option, omit the meat and use vegetable broth.
  • You can add other vegetables like chopped carrots, celery, or bell peppers along with the onion.
  • Adjust seasonings to your preference.
  • If the soup becomes too thick, add a little more broth or water.
