Description
A hearty and flavorful lasagna soup that can be made in just one pot, perfect for a quick and comforting weeknight meal.
Ingredients
- 1 lb ground beef or Italian sausage
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (28 ounce) can crushed tomatoes
- 1 (15 ounce) can tomato sauce
- 4 cups beef broth
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup lasagna noodles, broken
- 1/2 cup ricotta cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup shredded mozzarella cheese
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot or Dutch oven, brown the ground beef or sausage over medium-high heat. Drain off any excess grease.
- Add the chopped onion and cook until softened, about 5 minutes.
- Stir in the minced garlic and cook for 1 minute more until fragrant.
- Pour in the crushed tomatoes, tomato sauce, and beef broth.
- Season with dried basil, oregano, salt, and pepper. Bring the mixture to a boil.
- Add the broken lasagna noodles and stir. Reduce heat to medium-low, cover, and simmer for 10-12 minutes, or until the noodles are tender, stirring occasionally to prevent sticking.
- In a small bowl, mix together the ricotta cheese, Parmesan cheese, and mozzarella cheese.
- Ladle the soup into bowls. Top each serving with a dollop of the cheese mixture and a sprinkle of fresh parsley.
Notes
- For a vegetarian option, omit the meat and use vegetable broth.
- You can add other vegetables like chopped carrots, celery, or bell peppers along with the onion.
- Adjust seasonings to your preference.
- If the soup becomes too thick, add a little more broth or water.
